Having your story be respected

Several years ago, as I helped a friend move, she introduced me as “the person who is writing the gluten-free blog”. The response to her intro was hurtful, especially coming from a guy who didn’t even know me; he said, “well, you’ve been gluten-free for years. You should write a blog before she does.” Ugh!

The response has stuck with me for years, haunted me and kept me from writing when I wanted to; “who are you to write anything when there are so many others who know it better than you do?” His words from years ago still hold sway over me and my blog writing.

No longer!

My intention is to be more mindful with posting here- about my gluten-free experience which is on-going since 2013, food reviews, and topics on body image and food-related challenges.

We are all experts on our own experiences and trials. No one else can give that testimony or witness. To my “friend” who may or may not be reading this, I hope you yourself have started your own blog to help others through the challenges of GF living, you helped me, however, remember to be cognizant of others and their feelings and their need to be heard.

This year, as Covid-19 and quarantines and social distancing hit, they decided to go online. And this is a major plus for those of us who can’t stand crowds, prefer to remain at a distance, and hate paying money to park (sometimes more than the fee for the event). The offerings for this 3-day extravaganza are amazing! Crazy Summer!

Crazy Summer!

My summer began with a scheduled trip to Nashville TN for a faith-based conference on body image and eating issues, Hungry for Hope. This *would* have been my 4th year in attendance, except that the kidney stones that had been plaguing me for 5 months decided to cause problems and my trip was canceled, surgery scheduled instead.

Between kidney stones, braces, and general stress related to family, my weight dropped and I am trying to stabilize. This is a daily challenge, as is the challenge of continuing to eat GF.

It has been ONE YEAR! And it is fantastic! Clearer head, depression pretty much gone, even with the issues mentioned above, I feel great! Productivity uP, I’m getting work done!

I’m taking a vacation and will bring back pictures and stories from far away. I’m hoping that I’ll have lots to share about GF eating while I travel. No internet or phone service (too expensive) so will sign out and be back after my trip.

Yesterday was January 1st and I celebrated with my favorite gluten-free meal- soft tacos, this time fish (Swai) that my husband barbecued. We regularly go to a local taqueria for Mexican food (Super Taqueria); my husband and son get burritos and because they are with flour tortillas, I get the soft tacos with corn tortillas, so I’m not feeling left out. And Mexican food seems to be the easiest to find gluten-free. I’ve found that this is my staple- soft tacos or anything that can be made with corn tortillas, even pizza.
